Domaine François Raveneau produces wines of incredible finesse, minerality and purity. He is in a way the Coche-Dury of the North. The estate of only 8 hectares produces exclusively Chardonnay.
This premier cru is located on the top of a hill, hence the name "Butteaux" at the top of which stands a forest.The south-eastern exposure is conducive to morning sunshine. This cru is thus relatively "easy" compared to certain other terroirs. But be careful, we are staying with an estate that is absolutely not "sugar friendly".
The incredible acidity of Raveneau wines will allow them to wait wisely in your cellar or in that of the excellent friend to whom you have offered it.
The Chablis appellation is a bit "the enfant terrible" (bad kid) of Burgundy, because it is relatively far from other regions further south. But we must admit that we love it at WUAT. The differences between the "climates" are particularly striking there. This is the ideal appellation for a white wine tasting.
The rise in temperatures allows this northern region to increase the consistency of the quality of its wines and to shine in particular thanks to estates such as Raveneau, Dauvissat or Droin. We can bet that they will be more and more in demand.
