Château Pape Clément is one of the great classics of Bordeaux. The quality of the production of this castle is extremely regular, even in the most difficult years.
This is somewhat the case with this 1997 vintage. You can feel, by tasting it, that the Cabernet Sauvignons had some difficulty in reaching their perfect maturity and this is reflected in the structure and aroma of this wine. This grave is dry, concentrated, and tannic, in this vintage, it reminds me a little of certain Médoc from 1986. You know those wines that refuse to age and open up?
For tasting this bottle, two hours of decanting will be mandatory. Try to pair it with game, or a piece of grilled red meat accompanied by green vegetables (fresh beans, weights eat everything) because it is, so to speak, imposing.
