Domaine Gauby is located in the Roussillon wine region, in the south-west of France. The vines are planted on schist soil and are worked biodynamically. For several generations, the Gauby family has been producing exceptional wines that reflect the region's unique terroir.
Presentation of the Coume Gineste cuvée:
Coume Gineste 2012 is a cuvée produced by the Gauby estate from Grenache, Syrah and Mourvèdre grapes. This wine is made from grapes from vines around 70 years old, grown on clay-limestone soil. Coume Gineste is a wine of character, fruity and spicy, which offers a beautiful aromatic complexity.
This wine comes from vines cultivated according to organic-biological agriculture. The idea is to consider the farm as an organism in which the life cycle has priority. This way of working prohibits any chemical and synthetic product, respecting the soil-plant-animal-human chain of action. This bottle is the result of the symbiosis between man and his terroir. Bottling is done by gravity, without fining or filtration. A slight natural gas in its youth and a noble deposit during its evolution are the signs of a lively wine.
About Coume Gineste 2012:
Coume Gineste 2012 is a red wine made from Grenache black Grenache grapes. This vintage was produced from grapes harvested by hand from vines approximately 70 years old. The grapes were aged in oak barrels for 18 months, which allowed them to develop a beautiful tannic structure. The wine offers aromas of black fruits, spices and liquorice, as well as a nice length in the mouth. Thanks to its tannic structure, it benefits from substantial aging potential.

Coume Gineste 2012 goes perfectly with dishes of grilled red meat, game or aged cheese.
Service Tips:
Coume Gineste 2012 should be served at a temperature of 16-18°C. You will need to open it at least 4 to 6 hours minimum before tasting so that this wine begins to open up and avoid the sensation of reduction. . It is very likely that some matter will remain at the bottom of the glass after tasting (and we love that).
