Banyuls "Rimage" or "Vintage" are fortified wines from the southwest of France. Wines from vines over 50 years old.
Mutating a wine consists of stopping alcoholic fermentation by adding alcohol. This process allows the natural residual sugars of the grapes to be preserved. This principle is the same as in Ports among others.
These "mutated" wines have, thanks to their tannic structure, their sugars and their high alcohol content, a very great aging potential.
As with all red wines, the tannins melt over time. The aroma of the wines evolves towards black fruit jam and roasting.
When to drink a Banyuls? It is listed as a dessert wine on the label, a point on which we do not really agree. Indeed, tasting a sweet and alcoholic wine with a potentially already sweet dessert will tend to overload the palate. We would more readily offer it as an aperitif, with black olive tapenade or other antipasti. With fresh goat cheese or why not with game.
