Chateau Ausone 1989 - Saint-Emilion

Presentation of the domain:

Château Ausone is one of the most legendary estates in Bordeaux. Located on the right bank of the Garonne, in Saint-Émilion, it is classified 1er grand cru classé A. Its history dates back to Roman times, but it was in the 18th century that the estate began to produce world-renowned wines. Today, it is run by the Vauthier family, who took over the reins of the estate in 1997.

Presentation of the Ausone - Saint-Émilion vintage:

The Ausone cuvée is considered one of the greatest wines of Saint-Émilion, and perhaps even of all of Bordeaux. It is an exceptional wine, produced in very small quantities (around 20,000 bottles per year), from a blend of Cabernet Franc and Merlot. The Ausone cuvée is known for its finesse, complexity and length in the mouth.

The 1989 vintage in Saint-Émilion:

1989 is a legendary vintage, often cited as one of the best of the century in Bordeaux. The ideal climatic conditions, with a warm spring and a sunny summer, produced grapes of exceptional quality, both concentrated and perfectly balanced. The Saint-Émilion wines of this vintage are distinguished by their aromatic depth, their powerful structure and their ability to gracefully cross the decades. Château Ausone 1989 is a perfect example of the splendor of this year.

Food and wine pairing:

Château Ausone 1989 enhances gourmet and refined dishes:

A rack of lamb roasted with herbs from Provence.
A Rossini tournedos.
A beef stew with porcini mushrooms.
Mature cheeses like Saint-Nectaire or old Comté.
