History of the Château Château Pavie

Located in the heart of the Saint-Émilion appellation, Château Pavie is one of the most prestigious estates in Bordeaux. Elevated to the rank of Grand Cru Classé A in the 2012 classification, Pavie is renowned for its wines of unique opulence and depth. The estate covers approximately 37 hectares, benefiting from an exceptional terroir composed of limestone, clay and gravel. Bought by Gérard Perse in 1998, Château Pavie has been modernized while retaining its traditional know-how, offering emblematic and timeless vintages.

Château Pavie is a powerful, structured and elegant wine. It is distinguished by its aromatic richness, concentration and ageing capacity. The meticulous vinification and aging in new barrels (70%-100%) contribute to the development of an intense and refined wine, highlighting the typicality of Merlot, the main grape variety in the blend.

Presentation of the 1997 vintage

The 1997 vintage in Bordeaux was characterized by a variable climate. Early flowering and warm summer months allowed for rapid ripening of the grapes, while a slightly rainy September brought welcome freshness. The wines of the Right Bank, particularly those of Saint-Émilion, stood out for their suppleness, accessibility and immediate charm. 1997 is a vintage particularly appreciated by wine lovers who seek wines that are already mature, balanced and delicious.

  • Condition of the bottle : Perfect condition of conservation. Label and cap intact, bright and clear color.
  • Blend : 70% Merlot, 20% Cabernet Franc, 10% Cabernet Sauvignon.
  • Vinification and aging : Traditional Bordeaux vinification with long maceration, followed by aging for 18 to 24 months in new barrels (70%).
  • Tasting notes :
    • Color : Intense garnet red with a slight evolution towards tiled reflections.
    • Nose : Complex and expressive, combining aromas of ripe red fruits (cherry, crushed strawberry), spicy notes (pepper, vanilla) and touches of undergrowth and blond tobacco.
    • Palate : Silky and balanced texture, supported by a beautiful acidity. The tannins, perfectly melted, provide an elegant structure. A persistent finish with nuances of plum, cocoa and a slight minerality.
  • Aging potential : Ideal for drinking now, but will still develop favorably for 5 to 8 years thanks to its balanced structure.
