The 30-hectare vineyard is located on a limestone plateau just north of the town of Saint-Émilion
Soutard is known for its red wine, dominated by Merlot. The vineyard is mainly based on the clay-limestone soils of the plateau, but also has smaller portions on either sandier or clayier soils.
As in much of the region, Merlot remains the predominant grape variety with 63% of the vineyard. Next come Cabernet Franc 28%, Cabernet Sauvignon 7% and Malbec 2%.
The main blend is the classic Merlot – Cabernet Franc sometimes supplemented with Cabernet Sauvignon and Malbec depending on the vintage.
The wine is vinified partially in stainless steel vats, concrete vats and wooden tuns. Malolactic fermentation takes place in barrels. Château Soutard is then aged in 60% new French oak for approximately 18 months.
Exceptional provenance: These bottles come from a cellar of a great Swiss wine enthusiast and collector. We have acquired the complete collection containing more than 200 bottles of mainly French and Italian wines. The bottles have all been preserved following their purchase en primeur or shortly after their marketing on site, in a natural cellar buried under a 16th century convent. A damp cellar, which is why some labels are very worn. The levels are generally excellent or perfect and the most "fragile" bottles testify to conservation in total darkness for more than 30 years!
