Domaine Gauby is located in the Roussillon wine region in southwest France. The vines are planted on schist soil and are cultivated biodynamically. For several generations, the Gauby family has produced exceptional wines that reflect the unique terroir of the region.
Presentation of the Coume Gineste vintage:
Coume Gineste 2012 is a cuvée produced by the Gauby estate from the Grenache, Syrah and Mourvèdre grape varieties. This wine is made from grapes from vines that are around 70 years old, grown on clay-limestone soil. Coume Gineste is a wine of character, fruity and spicy, which offers a beautiful aromatic complexity.
This wine comes from vines cultivated according to organic-biological agriculture. The idea is to consider the farm as an organism in which the cycle of life is a priority. This way of working prohibits all chemical and synthetic products, respecting the chain of action soil-plant-animal-man. This bottle is the fruit of the symbiosis between man and his terroir. Bottling is done by gravity, without fining or filtration. A light natural gas in its youth and a noble deposit during its evolution are the signs of a living wine.

Coume Gineste 2012 is a red wine made from Grenache grapes from Grenache Noire. This vintage was produced from grapes harvested by hand from vines that were approximately 70 years old. The grapes were aged in oak barrels for 18 months, which allowed them to develop a beautiful tannic structure. The wine offers aromas of black fruits, spices and liquorice, as well as a beautiful length in the mouth. It benefits from a significant aging potential thanks to its tannic structure.

Serving Tips:
Coume Gineste 2012 should be served at a temperature of 16-18°C. You will need to open it at least 4 to 6 hours before tasting so that this wine begins to open up and avoid the sensation of reduction. It is very likely that some matter will remain at the bottom of the glass after tasting (and we love that).
