The legendary Caroni Distillery began operations in 1918 and was the state distillery of Trinidad. It had its own sugar mill to ensure its supply of local sugar cane. Until 2002, when the Trinidad government decided to close it, it only produced "heavy rums" (meaning lumberjack rums).
WUAT's opinion: Caroni is to Rum what Château Lafite is to Pauillac, it is a piece with a style that is recognizable among a thousand.
When reading the tasting notes, one can read subtle and poetic details worthy of a Speyside whisky. But let's be honest, this rum is intended for a very informed public who are looking to rediscover the unique sensation that one experiences when tasting it. It is a bit like the aches and pains after a sports workout, it hurts but you want more.
It releases aromas of burning tar (you know when you pass by a construction zone in the summer), pine sap and various wood essences, musk, prunes, leather and sometimes horse dung (yes, I insist)
If you have never tasted this rum, too bad for you, but you still have a few opportunities to catch up. But please avoid the versions reduced to 40%.
