Second classified growth of 1855, Château Romer du Hayot is far from being the most famous of Sauternes.
This small vineyard of "only" 15 ha produces between 10,000 and 30,000 bottles of Sauternes per year depending on the quality of the vintage. The estate also produces white and red wines under the "Graves" appellation.
The grape varieties have changed a lot since the beginning of the 2000s. Going from 70% Semillon, 25% Sauvignon and 5% Muscadelle to 90% Semillon, 10% Sauvignon.
Located in the commune of Fargues, the terroir is clayey-limestone and gravelly.
As with many Sauternes and sweet wines, this Romer du Hayot can be enjoyed today or kept for many years if stored in the right conditions.
