To put it simply, the young wines are very lively, sometimes even a little too fresh. We can sense all the particular characteristics of Sauvignon (exotic fruits, citrus fruits, etc.).
As they age, they retain their vigor but develop a patina and are rounder. The aromas of fresh fruit give way to more buttery and floral touches (hawthorn, orange blossom, etc.).
These wines are very "trendy" among tasters at the moment, particularly for pairing with seafood or sushi. It must be said that the increasing prices of Burgundies can make you want to try new things.
You can therefore taste this 2007 today, you can even decant it before serving it. A wait in the cellar until 2030 and beyond will pose no problem.
