The Parent estate has existed since the beginning of the 20th century. Very attached to family history, François Parent pays particular attention to respecting and continuing the know-how of his ancestors by bringing the modernity necessary to produce more "accessible" wines. François Parent, a fine winemaker, also produces the wines of his wife Anne Françoise Gros' estate (no less!)
Vinification: Cold maceration for 4 to 5 days with washing in the morning and evening. Maximum temperature limit of 34°. A temperature peak is deliberately sought. Devatting 4-5 days after alcoholic fermentation. Pumping over twice a day until half of the sugars have fermented. Then covering the vats and traditional punching down twice a day. Pressing by pneumatic press. Aging: Entirely in barrels with a proportion of 50% new barrels - various suppliers for blending various flavors. Important search for harmony of the fruit... First place is given to "Berthomieu" type barrels also supplemented by Rousseau barrels in strong toast.
About the vintage: 2010 is a great vintage in Burgundy. Much less easy than 2009, 2010 is concentrated, strict with powerful tannins. The yields were well below the average of previous years. You can therefore keep them for many years or enjoy them today with some aeration.
