Presentation of the Cuvée Sabarotte:
Terroir: granite arena, very poor and very filtering soil. On a very well exposed hillside in the heart of the Cornas appellation.
Vineyard: 100% Syrah with a low yield of 70 years of average age. Annual production of only 5000 bottles.
Vinification: Manual harvest, 100% destemmed. Modern vinification in thermoregulated stainless steel vats with regular pumping over and punching down. Significant extraction, vatting and long maceration of 3 weeks to obtain a concentrated wine with intense color.
Long aging of 18 months with moderate wood content: 25% new barrels, 20% one-year barrels and 55% two-year barrels.
A long-lasting wine that can be enjoyed today by decanting it.
Exceptional provenance: These bottles come from a cellar of a great Swiss enthusiast and collector. We have acquired the complete collection containing more than 200 bottles of mainly French and Italian wines. The bottles were all preserved following their purchase en primeur or shortly after their marketing on site, in a natural cellar buried under a 16th century convent. A damp cellar, which is why some labels are very worn. The levels are generally excellent or perfect and the most "fragile" bottles demonstrate storage in total darkness for more than 30 years!
