The Vin Jaune - Chateau Chalon 1992 - Domaine Auguste Pirou
It is the rarest and most controlled wine in the world, the most precise and the most mysterious at the same time, the only one which is defined by its color. Made exclusively from the late-harvested Savagnin grape, its production is limited to 20 hectoliters per hectare. It acquires its extraordinary "yellow taste" only by a long maturation in oak barrels, without topping, lasting at least 6 years, and can then exceed 5 generations of winegrowers. The "clavelin" bottle is strictly reserved for it. Many regional recipes call on him, such as the famous Coq au Vin Jaune, the glory of Franche-Comté gastronomy.
As you can see from the pictures, the labels are not perfect, we filmed them to prevent them from falling off. The levels are very good and the traces on the inner walls of the bottles testify to a long motionless aging lying down.
