For those who do not yet know the whites of Bordeaux, it's time to get started. Graves are particularly appreciable for their potential for aging and aromatic evolution.

To put it simply, the young wines are very lively, sometimes even a little too fresh. You can feel all the particular characteristics of Sauvignon (exotic fruits, citrus fruits, etc.).

As they age, they retain their vigor but acquire a patina and are rounder. The aromas of fresh fruit give way to more buttery and floral touches (hawthorn, orange blossom, etc.).

These wines are very "trendy" among tasters at the moment, particularly for pairings with seafood or sushi. It must be said that the increasing prices of Burgundies can make you want to try new things.

This bottle of Smith Haut Lafitte (SHL for friends) seems particularly well preserved given its light color. A very nice tasting in perspective.
