For those who don't yet know Bordeaux whites, it's time to get started. The grapes are particularly appreciable for their potential for aging and aromatic development.
To put it simply, the young wines are very lively, sometimes even a little too fresh. You can feel all the particular characteristics of sauvignon (exotic fruits, citrus fruits, etc.).
As they age, they keep their vigor but gain a patina, are rounder. The aromas of fresh fruit give way to more buttery and floral touches (hawthorn, orange blossom, etc.).
These wines are very "trendy" among tasters at the moment, particularly for marriages with seafood or sushi. It must be said that the increasing prices of Burgundy wines can make you want to try new things.
You will be able to taste this 2007 as of today, you can even pass it in a carafe before serving it. Waiting in the cellar until 2030 and more will not pose any problem.
