Champagne Philipponnat "Clos des Goisses" 2007
Presentation of the estate: Founded in 1910, the Philipponnat champagne house is located in Mareuil-sur-Aÿ, a village classified as a Grand Cru in Champagne. For more than 100 years, it has been committed to producing exceptional champagnes, respecting the Champagne tradition.
Clos des Goisses is THE great vintage cuvée of the moment. To give you an idea of the style of wine, it is a little as if the great finesse and elegance of the Cristal cuvée were combined with the impactful Grand Siècle cuvée. The best of both worlds in short. According to the words of the Philipponnat house, it is the most powerful of Champagne wines.
This cuvée comes from a blend of Pinot Noir (65%), Chardonnay (35%) planted on a slope with a slope of 45 ° facing due south, hence the name "Goisse" which means very sloping hillside in old local language. The wines are aged for 3/4 in oak and without malolactic fermentation, which allows it to retain great acidity but also requires more aging before being tasted. And that's good, because the bottles sleep in cellars for 8 to 12 years before disgorging.
WUAT's opinion: We hope that this bottle will be rightly appreciated by those who taste it (it would be sad not to share it). To be enjoyed on a powerful dish. Truffle, caviar, or game, nothing scares this magical cuvée.
