Presentation of the domain:

Founded in 1910, the Philipponnat champagne house is located in Mareuil-sur-Aÿ, a village classified as Grand Cru de la Champagne. For more than 100 years, it has strived to produce exceptional champagnes, while respecting the Champagne tradition.

Philipponnat was the first House to indicate on its bottles the dominant year used in the composition of each of its vintages, its dosage (here, “non-dosed”) and its disgorging date.

Presentation of the vintage:

This cuvée is made from a blend of Pinot Noir (65%), Chardonnay (30%) and Pinot Meunier (5%) coming mainly from 1er cru and grand cru plots. To this first press, the harvest vintage of which is indicated on each bottle, is added 20 to 30% of reserve wines managed in solera and aged in wood to incorporate old wines without losing freshness.

Traditional vinification avoiding any premature oxidation. Partial malolactic fermentation and barrel aging (30%) of the reserve wines to allow the aromas to gain complexity. No dosage (0 g/l) so as not to mask the character of the wine and its purity.

Aging on lees in the House's cellars at a constant temperature of 12°C for three years, much longer than the legal minimum of fifteen months.

Tasting advice:

The total absence of sugar allows all the constituent qualities of the wine to shine through in this cuvée, and offers a subtle alliance between aromatic precision (lemon notes, orange zest), minerality and vinosity. It is an aperitif wine full of freshness that goes perfectly with raw fish and seafood, and enhances Japanese cuisine.

WUAT Notes:

As we are slightly neurotic, we consider that vintages from different harvests or disgorged on different dates are not at all the same. You can therefore choose between these different versions and possibly compare them.
