This monopoly of Volnay 1er cru, located southwest of the village is produced by marvelous vines cultivated without pesticides or insecticides and the only input, manure, is of natural origin. The soil is worked, without weedkillers, to maintain aeration and flexibility of the soil.
After manual harvesting, the vinification is gentle and respectful of the unique grape variety that makes up the development of the estate's premier red wines: Pinot Noir.
Aging on lees takes place for 15 to 18 months in oak barrels. All the manipulations are done by gravity on six different levels.
A slight deposit may occur since the wines are generally neither fined nor filtered.
Tasting advice: Serve in tall glasses after having spent at least an hour in a carafe.
