The Parent domain has existed since the beginning of the 20th century. Very attached to family history, François Parent pays particular attention to respecting and pursuing the know-how of his ancestors by bringing the modernity necessary to produce more "accessible" wines. François Parent, fine winemaker, also produces wines from the estate of his wife Anne Françoise Gros (just that!)
Vinification: Cold maceration 4 to 5 days with washing powder morning and evening. Maximum temperature limitation to 34 °. A temperature peak is deliberately sought. Devatting 4-5 days after alcoholic fermentation. Pumping over twice a day until the fermentation of half of the sugars. Then the traditional tanks are covered and punched down twice a day. Pressing by pneumatic press. Aging: Completely in barrels with a proportion of 50% new barrels - various suppliers for assembling various flavors. Important research into harmony of the fruit ... The first place is given to "Berthomieu" type barrels also completed by strong toasting Rousseau barrels.
About the vintage: 2010 is a great vintage in Burgundy. Much less easy than 2009, 2010 is concentrated, strict with powerful tannins. The yields were well below the average for previous years. You can therefore keep them for many years or enjoy them today with a bit of decanting.
