Pernand-Vergelesses 1er cru "les Vergelesses" 1984 - Domaine Denis Père et Fils
Nose: Undergrowth, humus, bark
Palate: Imposing tannic structure for the vintage
Food and wine pairing: Small game, powerful cheeses from Burgundy if possible
Tasting advice: The 1984 vintage is fairly weak in Burgundy, but the Denis estate has always offered rustic and tannic wines suitable for aging. Try a quick decanter (flip the bottle directly into the decanter to make a big splash). And serve it right away. Yes the practice seems a bit barbaric but it is proven and approved.
