The Domaine des Varoilles is one of the oldest estates in Gevrey-Chambertin and therefore in Burgundy. We find traces of the existence of the domain since the 12th century!
The estate now has 10 ha of vines and are several monopolies. All the estate's wines are aged in oak barrels, partially renewed each year, for a period of 12 to 24 months. Sorry for the amateurs of technique but it is difficult to find precise details on the vinification of each cuvée and even less for the cuvée having more than 20 years.
Regarding style, the estate's wines are powerful in their young years and will require at least 5 years of aging to begin to express themselves. As is often the case with the Gevrey-Chambertins and all the more so for this 1989 vintage, the long years of aging have been beneficial to the deployment of tertiary and animal aromas.
